Grilled prosciutto tortillas
Grilled tortillas with prosciutto, shredded mozzarella, corn, spring onions and basil or oregano
Ingredients:
- 4 large tortillas
- 150 g prosciutto (thinly sliced)
- 200 g grated mozzarella
- 1 cup canned or frozen corn
- 3 spring onions (thinly sliced)
- Fresh basil or oregano (to taste, finely chopped or dried)
Process:
- Preparation of ingredients:
- If using frozen corn, thaw and drain
- Cut the spring onions into thin rings
- Chop fresh basil or oregano
- Grate the mozzarella
- Assembling the tortillas:
- Place one tortilla on a clean work surface
- Spread a layer of prosciutto evenly over the entire surface of the tortilla
- Sprinkle with grated mozzarella
- Add a layer of corn
- Spread the chopped spring onions over the whole surface
- Finally, sprinkle with chopped basil or oregano to taste
- Cover with a second tortilla and press
- Grilling:
- Heat the grill to medium-high heat. If you don’t have a grill, you can use a grill pan
- Place the prepared tortilla on the grill and grill for about 2-3 minutes on each side, or until the tortillas are golden brown and crispy and the cheese is melted
- Repeat this process with the remaining tortillas
- Serving:
- Carefully transfer the grilled tortillas to a cutting board
- Cut them into smaller pieces as preferred
- Serve hot
